Shrimp with Rice and Edamame

I’m back!
It’s a new year and I’m so ready to get on with it, the last two weeks have been a struggle trying to recover from all the holiday festivities. It feels good to be back on track and this dish is already one of my new favorites.


2 cups prepared rice
1 cup tomato – diced
1 cup edamame – shelled
1 lb shrimp – deveined
1/2 tsp garlic powder
1/2 tsp chipotle powder
1/2 tsp kosher salt
1 Tbsp olive oil

1 tsp olive oil
1 tsp lime juice
1 tsp cilantro – chopped
1/2 tsp honey
1/2 tsp garlic – minced
1/2 tsp salt
1/2 tsp black pepper
1. Combine the rice, tomato and edamame in a large bowl and set aside.
2. Sprinkle the shrimp with the garlic powder, chipotle powder and kosher salt.
3. Heat 1 Tbsp olive oil in a skillet, add shrimp and saute until cooked through (about 3 min) then add to the rice mixture.
4. Prepare the dressing by whisking together the lime juice, cilantro, olive oil, honey, garlic, salt and pepper.
5. Add to the rice mixture and serve.
